Our Produce
Orkney isn't the only island we source our food from. We have our own family croft on the beautiful Hebridean island of Lewis, where our Hebridean lambs roam the foreshore and feed on the heather strewn hills.
This provides the distinctive taste of Hebridean lamb and gives the meat the slightly darker hue that separates it from the often bland white sheep-meat. There is also a very important added benefit in that the meat is exceptionally low in fat, leading to much less cholestorol. In other words, it's good for you.
In the cooking, our Chef recommends taking it slow, to secure the taste and create meat that simply melts in the mouth. Try a Hebridean lamb stew or, for a special occasion, a rack of lamb along with herb mashed potatoes and seasonal veg.
At certain times of the year, the crystal clear seas surrounding the Isle of Lewis provide some amazing fare. Anything from Lobster to Scallops often find it's way to Browns restaurant. Lewis is also home to the famed Stornoway Black Pudding. Such is the variety of dishes that find a use for the famous pudding, we have been assured that Browns Restaurant has become the biggest buyer of the dish in Scotland.
On the more remote islands of Tiree, Coll and Benbecula, there are also Hebridean breeders who supply Farmer Browns with home-reared animals bred from the original black sheep brought to the islands by the Vikings - and raised in the same way by generations of crofters.
